YUMMYLICIOUS #15: CHERRY TOMATO & ARUGULA OMELETTE/ OMLETA S ČEŠNJEVCI IN RUKOLO

Eggs are one of the most nutritious foods. Full of vitamins, minerals, healthy fats and are a ˝complete˝ protein (they contain the nine essential amino acids). 
Not only are they delicious, they are so very versatile. 
Here's a yummy cherry tomato and arugula omelette.


Jajca so eno izmed najbolj popolnih živil. Vsebujejo veliko vitaminov, mineralov, zdravih maščob in imajo vseh 9 pomembnih esencialnih aminokislin (˝popolna˝ beljakovina). 
Ne samo, da so zelo okusna, še vsestranska so.
Danes bom z vami delila omleto s češnjevim paradižnikom in rukolo. 


Ingredients:
(1 serving) 
  • 2 eggs
  • 4 - 5 cherry tomatoes 
  • 1 handful fresh arugula 
  • 1 tsp olive oil
  • salt, black pepper, garlic powder

Preparation:
  1. Wash the tomatoes and cut into quarters. Heat the olive oil in pan on medium heat. Add the tomatoes to the pan and cook until they soften (about 2-3 minutes).
  2. In a small bowl mix the eggs and seasonings well. Before pouring the eggs into the pan add the arugula to the tomatoes. Then pour the eggs over and cook (for additional 2-3 minutes). 
  3. Flip the omlet if needed and cook for not more than 1 minute.
  4. Serve with a some bread, crackers or rice cakes.

Sestavine:
  • 2 jajci
  • 4 - 5 češnjevih paradižnikov
  • 1 pest rukole
  • 1 čajna žlička olivnega olja
  • sol, poper, česen v prahu

Priprava:
  1.  Operite in narežite češnjevec na četrtine. V ponvi segrejte oljčno olje na srednjem ognju. Dodajte paradižnik in ga kuhajte, dokler se ne zmehča (2-3 minute).
  2. V majhni skledi dobro zmešajte jajca in začimbe. Preden prilijete jajca v ponev dodajte rukolo paradižniku. Nato prelijte z jajci in kuhajte dodatne 2-3 minute. 
  3. Postrezite s kruhom, krekerji ali pa riževimi vaflji.
