YUMMYLICIOUS #14: QUINOA WITH ZUCCHINI & AVOCADO/ KVINOJA Z BUČKAMI & AVOKADOM

Today I'm sharing with you this simple, tasty and filling vegan recipe. You can serve it as a main dish or as a side dish.

Danes bom z vami delila ta preprost, okusen in nasiten veganski recept. Lahko ga servirate kot glavno jed ali pa prilogo.

Ingredients:
(2 servings) 
  • 1 cup quinoa
  • 2 cups water
  • 1 medium onion
  • 1 large zucchini
  • 1 avocado
  • 1 tbsp olive oil
  • salt, black pepper, garlic powder

Preparation:

    1. Cook the quinoa (1:2 = quinoa:water). Before cooking the quinoa make sure to rinse it. Bring the water to a boil, add the spices you prefer (I like using vegetable broth powder) and quinoa. Lower the heat to medium/low heat and simmer for about 15 minutes. After that let the quinoa stand for about 5 minutes. 
    2. While the quinoa is cooking you can prepare the zucchini. Wash and cut the zucchini in to cubes. Peel and chop the onion. Add olive oil to a pan and heat on medium heat. Add the onion and sauté until it softens and gets a little bit brown then add the zucchini and season with salt, black pepper and garlic powder. Cook for additional 5 minus or until the zucchini is tender but still slightly crisp.  
    3. Cut the avocado in to small cubes. Mix the quinoa and zucchini and plate. Top the plate with avocado.

    Sestavine:
    (2 obroka)
    • 1 šalčka kvinoje (jaz uporabim kar klasično šalčko za kavo, približno 170 g)
    • 2 šalčki vode (šalčka naj bo iste velikosti kot ste jo uporabili za kvinojo, približno 500 ml)
    • 1 srednja čebula
    • 1 velika bučka
    • 1 avokado
    • 1 jedilna žlica olivnega olja
    • sol, poper, česen v prahu

    Priprava:
    1. Skuhajte kvinojo (1:2 = kvinoja:voda). Preden začnete kuhati, kvinojo dobro sperite. V vrelo vodo dajte željne začimbe (jaz sem uporabila zelenjavno jušno osnovo v prahu) in kvinojo. Štedilnik znižajte na srednje nizek ogenj in kuhajte 15 minut. Ko je kvinoja skuhano jo odstavite iz ognja in pustite stati 5 minut. 
    2. Med tem, ko kuhate kvinojo lahko pripravite bučke. Operite in narežite bučke na kocke. Olupite in sesekljajte čebulo. Segrejte olivno olje v ponvi na srednjem ognju in dodajte čebulo. Čebulo kuhate toliko časa, da se zmehča in rahlo porjavi. Dodajte bučke in začimbe (sol, poper, česen v prahu) in kuhajte nadaljnjih 5 minut, da se bučke malo zmehčajo. 
    3. Narežite avokado na kocke. Zmešajte bučke in kvinojo ter servirajte na krožnik in dodajte avokado.
