YUMMYLICIOUS #8: Coconut and berry ice pops/ Kokosove ledene lučke z jagodami in borovnicami

Summer is here and even though the weather doesn't always seem like so, my go to healthy ice pops are perfect for this season.
They are refreshing, delicious and look great too!


Poletje je tu pa čeprav vreme ne kaže vedno tako. Ne glede na vse, imam za vas danes moje najljubše zdrave lučke.
So izredno osvežilne, okusne in izgledajo super!


Ingredients:
  • Coconut milk (canned is better for this recipe) 
  • Coconut water (you can use the coconut water from the can)
  • Strawberries (you can use any other fruit)
  • Blueberries


You will also need:

  • Popsicle molds (or plastic cups and popsicle sticks- plastic spoons will also work)

Preparation:
  1. Wash and cut the fruit. 
  2. Mix the coconut milk with the coconut water. To create the marble effect I made sure to use caned full fat coconut milk. I left it in the fridge for a few hours to let the coconut fat and water separate. Then I scooped out most of the creamy coconut yummynes and mix it in a blender with the coconut water. Be sure not to blend it too much, just pulse it. 
  3. Fill the molds with the fruit. Then pour the coconut mixture until each mold is full to the top. 
  4. Place the popsicle sticks in the molds and freeze in the freezer. 
  5. When the ice pops are done run them under some warm water for few seconds to make them come out easier.
Now all you have left is to ENJOY!



Sestavine:
  • Kokosovo mleko (iz konzerve)
  • Kokosova voda (lahko uporabite vodo iz konzerve)
  • Jagode (lahko uporabite katerokoli drugo sadje)
  • Borovnice


Potrebujete tudi:
  • Modelčke za izdelavo lučk ( ali plastične lončke in palčke-plastične žličke so tudi primerne)

Priprava:
  • Operite in narežite sadje.
  • Zmešajte kokosovo mleko in kokosovo vodo. Če želite doseči marmornati učinek, morate uporabiti polnomastno kokosovo mleko iz konzervi. Konzervo pustite v hladilniku za nekaj ur, da se ločita kokosova mast in voda. Nato z žlico posnemite gosto smetano, ki se naredi na vrhu mleka. Kokosovo smetano zmešajte s kokosovo vodo v blenderju z pulznim mešanjem. 
  • Modelčke napolnite s sadjem in čez zlijte kokosovo mešanico do vrha. 
  • Vstavite sladoledne palčke v modelčke in dajte v zamrzovalnik. 
  • Da boste lažje spravili lučke ven iz modelčkov jih postavite pod toplo vodo za nekaj sekund.
